運營食品冷庫需要注意的兩點問題:

1、溫度的控制,不同的食品具有不同的最適冷藏溫度。冷庫溫度和入庫后食品的溫度受多種因素的影響,如入庫時食品的溫度與庫溫的差別、制冷機的效能與庫容、庫內空氣流通情況、堆碼方式,食品品種及成熟度等。
